Oyster sauce nicely complements the slightly bittersweet taste of chinese language program broccoli (gai lan). Blanching turns chinese language program broccoli a wonderful jade green, but you can use reqular broccoli if it's not available. Serves three to 4.

•10 ounces chinese language program broccoli (gai lan)
•1 teaspoon salt
•1 teaspoon baking soda
•1 slice ginger (about 1/2-inch thick)
•Sauce:
•3 tablespoons chicken broth or water
•2 tablespoons oyster sauce
•1 tablespoon chinese language program rice wine or dried out sherry
•1/2 teaspoon sugar
Preparation:
Wash the chinese language program broccoli. reduce away the ends if not currently trimmed and reduce into bite-sized pieces (about two inches long).
In a big saucepan, include sufficient drinking water to include the broccoli. include the salt, baking soda and ginger. provide to some boil.
While waiting for your drinking water to boil, put together the sauce. Combine the chicken broth or water, oyster sauce, rice wine or dried out sherry and sugar. provide to some boil in the little saucepan. Turn the heat cutting and retain cozy whilst blanching the broccoli.
Add the chinese language program broccoli for the boiling water. Cook right up until the stalks are sensitive but crisp (3 - four minutes). Rinse in chilly operating water. Drain.
Pour the sauce more than the broccoli. Serve immediately.
